Paneer
Paneer is a fresh cheese common in South Asian cuisine. It is a non-melting farmer cheese or curd cheese made by curdling heated milk with lemon juice, vinegar, or any other food acids. Queso blanco or queso fresco or queso panela are often recommended as substitutes in the Americas as they are commercially available in many American markets but paneer is not. Both are generally salted, unlike paneer.
