I confess openly that I am a dire fan of pasta. So I constantly look for different ways and means to cook it. Most of the pasta dishes can be made vegetarian. It depends on how you cook, you can make it as healthier and as cheesier you want. I stick to the one overloaded with vegetables. This one has blast of vegetables and it tastes soooo gooood.

Directions :

1. Boil water and add salt and a tea spoon oil to it(Yes yes I know its a blasphemy to add oil to pasta when you boil. But I add oil deliberately because I want them in texture like noodles where veggies do not get over mixed with pasta. Still not convinced! okay skip the oil ).Now add pasta to the boiling water and cook till al dente.

2. Chop all the vegetables thin and long.

3. In a wok put little olive oil and saute Onions followed by other vegetables. Ensure you saute them one after the other.

4. Add Cooking wine and Vinegar to make them tender. You can also add little pasta water from the boiled pasta . Once the veggies are tender add the red pasta sauce and salt n pepper.

5. After mixing for couple of minutes add drained boiled pasta in it and give it a gentle toss so that everything combines.

6. Sprinkle some Parmesan Cheese and serve hot.

Spiced Raisin Coffee Cake

I always say baking is so therapeutic . I love to bake whenever I am low or I am happy or I have nothing else to do. I always wanted to learn baking but there was no one in my family who had prior experience in baking. So I started searching internet and after a lot of hit and trials I can say I can bake a perfect cake once in a while 😛 Sharing this recipe of Spiced Raisin Coffee Cake with you which surprisingly came out so well.

Spiced Raisin Coffee Cake
Update: Last I had made this Spiced Raisin Coffee cake when I had just started blogging. I hadn’t posted step by step pictures of the recipe but since then the taste of the cake and this thought had been haunting me. Yesterday when I had some family people visiting us I took the opportunity to bake this for dessert. It certainly was loved. The flavour of Pumpkin Pie Spice, lemon zest and vanilla made everything very aromatic and divine. The texture of the cake was absolutely gorgeous and the credit goes to inclusion of organic eggs from Eggee. They are the best quality eggs I have come across. If you like in Delhi, NCR get yourself a pack and try them out!

Directions :

1. Preheat your oven to 350 degrees, (Know more about Oven Temperature and Conversions) grease a 8 inches Springform with non stick cooking spray. You can buy this spring foam pan from our online store The Gourmet Shop.

2. In a large bowl, add All Purpose Flour, Baking Powder and Pumpkin Pie Spice. You can make your own pumpkin pie spice. Get the recipe here. Mix everything and set aside.





3. In a small bowl, mix raisins with about ½ cup of the dry ingredients and toss well until all the raisins are covered in the flour mixture, set aside.

4. In a large bowl, cream together the butter and sugar for about 1 minute. 




5. Whisk in eggs, vanilla and lemon zest 





6.Add milk and buttermilk and mix everything until it’s a nice smooth batter. You can make Buttermilk at home. Just follow this simple recipe.

7. Add the dry ingredients and mix until all the dry ingredients are moistened but not over mixed.




8. Fold the raisins mixture in the batter, pour batter into the prepared pan making sure to smoothen out the top.




9.In a small bowl, mix add castor sugar and brown sugar.  Add chopped walnut and cinnamon powder . 





10. Also add cold butter cubes and mix it with your fingers or a fork until its has sand like texture.




11. Spread it evenly over the cake and bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.

12.Let cool for about 15 minutes before slicing and serving.

This Rava Pizza Bread is my husband’s favorite breakfast. Even I don’t mind making for him because it is fast and is ready in no time. Also it is healthy and very filling. It is even great for fussy kids. I came across this recipe years ago when I just started experimenting with food. But even with years this recipe has always saved me when I was running out of time in the morning not because of any other reason but simply I was too lazy to get out of bed 😛 Yeah I am not a morning person so, such recipes are always my sought out breakfast recipes. Before I brag more tales of laziness I want you to note this recipe.

Directions:
1.In a mixing bowl mix onions capsicum and tomatoes along with yogurt and sooji.

2. Mix well till it forms a thick paste. You can add more yogurt if you feel the mixture is very thick but it should not be liquid.Add Salt and Pepper to this paste and set aside for 5 minutes for sooji to absorb yogurt.

3. In a nonstick flat pan pour two tbsp oil to cover the surface and place two bread slices next to each other. Make sure your gas flame is on low otherwise the lower side of bread will become over toasted.

4.Take the spoonful of paste and spread over each bread as a thin layer. Do not make the layer thick for it will not cook evenly and wont taste good.

5. Drizzle little oil over the thin layer of paste and turn the bread upside down with the paste side facing down. Now you can turn the gas flame on high.

6. Cook for about 3-4 minutes and then carefully turn it upside down. If the bread topping is properly cooked and settled it will  come out easily without sticking to the pan. If you feel its still sticky give it couple of minutes to cook and then try turning it again.

7. Place them on the serving plate and sprinkle on top some chili flakes and oregano.
8. Repeat the above with the other bread slices.

On any lazy Sunday when me and my husband get time to enjoy our cup of tea and yap, this snack gives us a perfect company. Its easy and ready in no time if you have some pizza dough readily available in your freezer. Its not very high in calories also so you can enjoy this anytime you wish. Its the same standard recipe which I use for my White Sandwich Bread,

Directions:

1. Take out the pizza dough bag out of freezer and put it in fridge overnight to thaw. If using fresh get the recipe here.

2.Preheat the oven to 400 degrees (Know more about Oven temperatures and Conversion), line a baking sheet with parchment paper, I am using Oddy Uniwraps Parchment Paper because this paper doesn’t burn on baking and doesn’t let the food stick to the paper.

3.Place the ball of dough on a floured surface and roll it into a circle using your roller pin.

4. Cut the dough into 1/2 inch strips using a knife or pizza cutter.

5. Wrap a dough strip around your two fingers and snip the remaining dough. Turn this end inside to form a knot. You can even roll it into small balls for convenience.

6. Place them on the baking sheet lined with parchment paper. Bake it in the preheated oven for 15-20 minutes until golden brown. In the meanwhile make the Vinaigrette .

4. In a small food processor, add the garlic cloves or garlic powder, oil and parsley.

5. Season with salt and pepper and blend until smooth to make vinaigrette.

6. Immediately as the knots are out of the oven put the knots to a large bowl and pour vinaigrette on top and toss together until they are well coated in the garlic oil.

7. Serve hot and enjoy the deliciousness of garlic parsley oil in these crisp pizza dough knots.
