Diwali, the festival of lights, merriment and over indulgence is over which meals you must be absolutely over with sweets, fried and all that rich food festivity has to offer. Its time to come back to senses and start afresh. Eating a baked Oatmeal with banana bread is a good option which keeps your appetite full and is nutritious at the same time. You can have this easy delicious dish for breakfast or even as a dessert. I simply wouldn’t judge you 😛 This recipe is even good for people with gluten allergies, as it uses no flour.

It has goodness of bananas and Oatmeal. When you bake these you will feel you are having a slice of warm banana bread. Also you geto t use your ripe bananas no one wants to touch. I have made various other recipes which consumes ripened bananas but this one is special because it uses no flour. I am a fan of these. When are you making one?

Directions:

1. In a bowl or jar peel over ripe bananas and mash them using a potato masher.

2. add an egg and whisk until its combined.

4. Add melted butter and set the wet ingredients aside.

5. In the meanwhile spray or brush a baking dish with oil and preheat your oven to 180 degree Celsius (Learn more about Oven temperatures and Conversions).

7. Also add baking powder, nutmeg powder and brown sugar. Combine everything.

8. Add wet ingredients to the dry ingredients and pour the batter in the baking dish. Combine them using a spatula.

9. Bake in the preheated oven for 25 to 30 minutes on 1180 degree Celsius. Remove it from oven and top it with toasted walnuts.

10. Cool it slightly before slicing and serving. You can drizzle chocolate sauce or caramel sauce for added flavour or even a scoop of vanilla ice cream wouldn’t hurt anyone 😛

Since the starting of the year when I got my air fryer I have been trying recipes giving them a new healthy avatar. I made Malai KoftaKamal Kakdi Kay Koftay Plantain & Potato Kebabs and many other things in this amazing gadget. It has changed the way we eat. The things I avoided because they were fried and greasy have come back in our life but now with a healthy makeover. Making this decisions not only keeps our weight in control but also gives us the pleasure of eating everything (almost) without feeling guilty.

Recently, I was thinking about making Begun Bhaja which are deliciously crispy Aubergine Slices which are marinated in spices and then deep fried. This recipe hails from Bengal which is known for its cuisine and culture. I love traditional recipes and dont wanna twist and turn them much. I followed the same recipe however I changed the way you cook it, I air fried them to make them guilt free. They were still crispy and delicious. If you are thinking to change your lifestyle do invest in an airfryer and make healthy choices, because you are what you eat 🙂

Directions:
1. Take a big sized Aubergine or Eggplant. The bigger the size the bigger will be the slices. Wash it and pat dry.

2. Cut it into thin slices about 1 cm thick and soak them in salted water for about 20-25 minutes. We soak the eggplant slices because sometimes the eggplants can be bitter and this will ensure they loose their bitterness.

3. In the meanwhile in a bowl add Red Chili Powder and turmeric powder.

4. Also add garam masala, amchur powder.

5. Also season it with salt and add chana masala. yes that does the trick!

6. Pat dry the soaked pieces of eggplants and rub the dry spice mix on them on both the sides.

7. Place them in the bowl and sprinkle some lemon juice on them. Let them marinate for 10 minutes.

8. Preheat your airfryer for 10 minutes on 180 degrees.

9. In a flat plate take some chickpea flour or besan and coat the marinated eggplant with flour on both sides. You can dust the extra.

10. Once the air fryer is preheated add a few slices on the wire rack of the basket and brush with some mustard oil. Let it air fry for 15-18 minutes. Flip it half way and brush the other side also with oil and continue to cook till you see them golden brown and crisp. Follow the same with rest of the slices.

11. Serve hot with dal and roti or you can just eat it like a snack with your drinks 🙂

Every household has its unique eating habits. One vegetable or dish may be a regular affair for some however, unheard for many others. This depends on the culture, place and availability of resources. When I was in Mexico I explored so many local produce and included them in my daily menu and when destiny brought me to Almora, my small hilly town things were different. The Himalayas not only bring serene beauty to the place but also bestows on us bounty of nature. I love to try them out and rather I feel privileged. Some time back I made Angel Hair Pasta with Garlicky Lingda, which is Fiddlehead Fern found in the hills. I also made Sherbet with Kaafal or Bay Berries found in this particular Himalayan region.

And when I saw this serpent looking vegetable in the market I was drawn to its beauty. It looked ecstatic. Its called as Chichinda or Padwal in Hindi and Snake Gourd or Serpent Gourd in English. Most of the people make it like any other gourd sabzi however, I tried to make it differently. I stuffed it with cooked Chicken Keema and then cooked the outer body with the stuffing. It took this humble vegetable to a whole new level. You can always stuff it with mashed potatoes or paneer

Directions:
1. Wash the snake gourd thoroughly and cut them into 2 inch long pieces. Scoop out the pulpy portion by running a knife in the centre. Reserve the pulp.

2. Repeat the same with rest of the pieces and set aside.

3. Chop Onions, Tomatoes, Ginger, garlic and green chillies finely and set aside.

4. In a pan pour some oil and add cumin seeds. They will crackle in a few seconds.

5. Add ginger garlic and green chillies and saute them till the raw smell of garlic fades away. At this stage add chopped onions and continue to cook till they are transparent and soft.

6. Add tomato sand continue to cook till they are gooey and soft.

7. Season it with salt, red chilli powder and Turmeric powder. Combine  everything.

8. Add minced chicken keema and reserved pulp of gourd and toss it with the spices in the pan. Saute for a couple of minutes till chicken is cooked half way through.

9. Add water and cover with a lid abd continue to cook further.

11. Add Garam masala and turn the flame off.

12. Fill the stuffing  inside the hollow snake gourd pieces we had reserved.

15. When the gourds have acquired a golden colour all over and are softer they are done. Turn the flame off and serve hot with Roti.

Pancakes are my favourite breakfast as they bring out the child in me. I love the fluffy, cakey texture and then you get to decorate it with chocolate, maple syrup, honey… fresh fruits… chocolate chips and every sugary thing on earth!! Its time for Halloween and I have roasted a huge pumpkin and made fresh Pumpkin Puree. Today I made these fluffy pancakes with pumpkin puree which were to die for.

I plan to make a lot of other things in the days to come. Adding Pumpkin to recipes is not only delicious but pulls up the nutritional quotient of the dish. If you wanna hide pumpkin in your kids food try these pancakes. I am sure they will love it.

6. Heat a pan or griddle and brush it with butter or spray with some oil. Pour a ladle full of batter in the centre.

7. When you see some bubbles emerging on the cake batter that’s when you must flip it to cook on the other side. Cook the other side for a few minutes or till the top is golden in colour.

8. Stack a few pancakes on top of each other and generously drizzle with some maple syrup and even a cube of butter. Indulge in the festivity with style, taste and nutrition.

Halloween is celebrated in the western countries with pomp and show. While I was in Mexico they celebrated this day by the name Dia de Muerto which means Day of the dead. On this day all departed souls are fondly remembered. However this has become more fashionable now and losing its correct relevance. But Yellow Pumpkin is something which symbolizes Halloween. They make Jack O lanterns and even make dishes with Pumpkin. I get into a festive mode when I see yellow pumpkin.

Last year I made Pumpkin Buns using Pumpkin Puree and last to last year I made Pumpkin Cake Rolls for the halloween. This year I  was looking for healthier recipes which uses Whole wheat flour and of course my homemade Pumpkin Puree. Nothing was better than to make these baked Pumpkin Doughnuts.These Doughnuts were full of flavour and icing on the cake was the cinnamon sugar topping. They simply melted in the mouth. This was the best doughnut recipe ever. What are you making for Halloween? 

Directions: 

1.  In a bowl add All purpose Flour or Whole wheat Flour. Add Baking Soda and Baking powder.

3. Also add Pumpkin Pie Spice. You can make your own pumpkin pie spice at home, find out the recipe here. Also add Brown sugar and castor sugar and combine. Set aside the dry ingredients.

4. In another bowl add pumpkin puree. You can make your own pumpkin puree at home. Find out the recipe here. Also add an egg and whisk everything together*.

5. Add milk, melted butter and vanilla essence.

6. Whisk everything together and add the wet ingredients into dry ingredients and combine. Do not over mix. Just mix till everything is moist. If you feel the batter doesn’t have a pourable consistency add a little more milk and combine.

7. Spray a donut mould with oil and preheat your oven to 180 degree Celsius. (Learn more about Oven temperatures and Conversion).

8. Fill 3/4th of the cavity with batter. You can use spoon or transfer the batter in a pipping bag and squeeze out the batter in the mould. Bake it in a preheated oven for 10 minutes. When it comes down to room temperature remove them doughnuts from the mould using the back of a knife.

9. For the Cinnamon sugar topping you need to add castor sugar in a bowl and add ground cinnamon to it. Mix them together. Brush the top of the donut with some melted butter and dunk the buttered face in the cinnamon sugar.

10. Serve them with your favourite cup of Coffee and enjoy the deliciousness.

I find Bell Peppers to be the most beautiful vegetable. I have talked in length about this in my Charred Bell Pepper and Pine Nut Pasta Recipe. So I will not yap about it anymore. I had a few bell peppers in my fridge and I was looking for some interesting recipe to put them to use other than using them for pastas and stir fries. That’s when I came across this Syrian Recipe of Muhammara. This was the most interesting dip I have ever made. The addition of Pomegranate Molasses gives it that additional tangy kick which cannot be described in words. And walnuts adds magic to the dip and makes it absolutely irrepressible.

Specially when Diwali is right around the corner, I have planned this for my teen patti or poker parties wherein you can munch crackers or salad sticks with this  delicious dip. If you have a party in your house you shouldn’t think twice just make this and amaze your friends.

Directions:

1. Take some Red Bell Peppers and roast them in an oven and remove its skin and also discard its inner membranes and seeds. Learn how to roast Bell Peppers here. Add the pulp of the pepper in a blender.

6. Now add bread crumb or u can even add panko. And blitz again in the blender till you get a smooth thick dip like consistency. Add more bread crumb and pulse if the dip is still loose.

7. Transfer the dip in a serving bowl and make a swirling well in the center with the back of a spoon and add a generous drizzle of olive oil and sprinkle some crushed walnuts. Serve with crackers, cucumber sticks, lavaash, pita bread and anything else you fancy 🙂

By now I must stop yapping about my love for mushrooms. Its a known fact and needs no more proof. I have 15 recipes of Mushroom on my blog already what else needs to be said. If you give me just mushrooms, I can happily spend my entire life eating Mushrooms 🙂 If I hadn’t included this classic recipe of Cream of Mushroom Recipe this collective would have been totally incomplete.  This time I promised my self to take pictures before all of it is devoured.  This recipe doesn’t use any flour to thicken the soup. But if you like you can add 1 tablespoon All purpose flour to it. This soup is a haven for all mushroom Lovers. I often team it up with my fresh homemade Whole Wheat bread.

Its very easy to put together. Even bachelors can make this and doesn’t require much time and effort. The quantity of cream can always be adjusted and the soup can be made healthier as per your need.  If you are looking for other soup recipes you can find the links below.

Directions:
1. Wash Mushrooms for any grit and pat them dry using a kitchen towel. Chop them into thin slices and set aside. Also chop Onions and garlic.

2. In a pot add some olive oil and also add chopped garlic and onions. Saute them till they have become soft and onions have turned pink. At this stage add sliced mushrooms and and toss them with onions and garlic.

3. Add thyme and Parsley. I used both in dried form. Mix together with the mushrooms. Add All Purpose Flour to the mushrooms and saute for a minute. This will make the soup more thicker. This is purely optional.

4. Turn the flame on low and cover it with a lid. Let mushrooms sweat out and release water. This should take about 5-7 minutes.

5. Add water and a cube of vegetable broth. You can even use fresh broth if you like.

6. Season with salt and pepper. You can also add a pinch of nutmeg.

7. Cover it once again and let it come to a boil. Remove the lid and turn the flame off. Puree the mushrooms using a hand blender or instead you can use a conventional blender till everything becomes smooth.

8. Return it back to the flame and bring it to another boil. Add cream and combine.

9. Transfer it to a serving bowl and garnish with chilli oil and add freshly chopped herbs. You can serve it with fresh home made bread. This soup is truly heartwarming.

I have been meaning to make these baked Apple Cider Doughnuts with Orange Glaze for more than three years ever since I saw this recipe on Laura in the Kitchen. There were so many impediments on the way. First I did not have the doughnut mould, which I got from US. Then I made Apple Cider from scratch which was a huge huge achievement for me. For those who do not know there is a difference between Apple Cider and Apple Cider Vinegar. Then I  learnt to make fresh apple butter and even pumpkin pie spice. And by the time I arranged all this.. the season of fresh oranges disappeared 🙁 I did not give up and next year I did everything and baked these beauties just perfect for the fall season. All I can say it was worth all the effort.. where there is a will there is a way.

The doughnuts were extremely delicious and aromatic. The recipe uses no oil in the batter, only a little for brushing the pan. The orange glaze on top is the best part of these Doughnuts, they simply melt in your mouth. You must try them for this fall.

5. Add salt and Pumpkin Pie Spice. Of Course you can easily make it at home. Follow this recipe . Give all the dry ingredients a gentle stir and combine.

6. Add the dry ingredients to the wet batter and mix till everything is moistened. Do not over mix.

7. Preheat your oven for 10 minutes on 180 degree C (Learn more about Oven temperatures and Conversions) . Grease a donut baking pan with oil and pour the batter in a piping bag for ease.

8. Fill the doughnut mould with the batter. Ensure you just fill 3/4 of it.

9. Bake it in a preheated oven for ten minutes or until cooked through. Take them out of the oven and let them come to room temperature. Remove them on a wire mesh and place the wire mesh on a sheet of parchment paper.

10. In the meanwhile for the orange glaze add icing sugar to the bowl and add orange zest to it.

11.  Add Pumpkin Pie Spice and Apple Cider Vinegar. Add Cider spoon by spoon to get that syrupy consistency. It should not be very thick or thin.

12. Mix well and check the consistency.

13. Once the glaze is ready and doughnuts are at room temperature. Dip the doughnuts in the glaze and place them on the wired mesh and let the extra drip off. Indulge and enjoy the deliciousness of yummy Doughnuts.

There are a few vegetables which are not commonly used in all households. It might be due to difficulty in making them or purely because of their taste. When I saw elephant foot Yam which is also known as Suran or Jimikand in the farmer’s market I asked my mother why we never brought it home. The reason she gave me was that she did not like its taste but that my grandfather was very fond of it. I decided to buy it and experiment it in my kitchen. Sometimes when you make a recipe in your own style disappoints you. What you need is a fresh eye and a new recipe which makes that dish exciting. That is exactly what I did and tried a gujarati recipe which can eaten during navratri fasting.

The recipe was quite simple and the results were amazing. The khichdi turned out delicious, filling and I found a new and interesting way to use Jimikand. I will be trying out more suran recipes in the days to come. Lets see if I can make Suran more appetizing and to my taste buds.

Directions:
1. Apply oil in your hands to avoid irritation and itchy feeling on your hands while handling Jimikand.  Cut a piece of suran or jimikand and peel its skin.

2. Grate the yam and soak the grated pieces in a bowl of water till we use it for cooking. This will prevent it from getting black.

3. In a wok add some oil and when the oil is hot enough add cumin seeds and sesame seeds and wait for them to crackle for a few seconds.

4. Add chopped green chillies and pounded peanuts. toss the peanuts till they have got some colour. Do not burn it.

5. Add grated yam and salt. Mix everything and let it cook uncovered for 6-8 minutes.

6. Add ground cinnamon and cloves and combine. Since its a gujarati Recipe you may like to add a little sugar to it. I am not fond of it so gave it a pass. Turn the flame off.

7. Add juice of lemon and mix thoroughly, this will prevent the itchy feeling when you eat it and overall makes the khichdi delicious. Garnish with fresh Coriander Leaves and grated fresh Coconut.

8. Serve hot with fresh plain curd and falahari Dhaniya Chutney. Its the most fulfilling vrat or fast recipe and can be made in no time.

When you have leftover bananas what do you make with them? Yes that is a very common question and a standard answer is to make Banana Bread with it. Even I used to make Banana Breads. Infact on my blog you can find Whole Wheat Vegan Banana Bread with Melon seeds and Vegan Chocolate Banana Bread recipes but then making a cake or a bread means adding sugar and butter and all those extra calories. 🙁 Therefore, salvaging the bananas always turned out to be a calorie bomb.

Then one day I came across a recipe which said banana ice cream and when I read it, it wasn’t even a recipe . It was just a way by which a guilt free creamy banana ice cream can be made. It required no sugar, no cream, no eggs in fact just about bananas and milk and if you are feeling naughty you can add caramel sauce on top and serve it with toasted almonds slices. I had to try it to believe it if it really worked. To my utmost surprise that was the most delicious way of using the bananas and with no extra calories and effort.
